Some recipes I WANT to try

Hey fellow newbie chefs!

So, this time, I wanted to show that despite writing a blog about cooking, I’m probably on the same experience level as most college students. SO, I wanted to have a link sharing party!

Here are some recipes I want to try… let me know if you’ve tackled any of them, or any new recipes you want to try or think I should test out!

Quick bites: Apple cider float!

So everything has been extremely crazy around 11 Foster Place. Paige is off to interviews, Kristina is in the throes of student teacher applications and I’m running around like a chicken with its head cut off trying to get everything done. This is fairly typical of us.

So, one night as fall was approaching, Paige was on Pinterest and found a recipe which we’ll keep in our kitchen for a good period of time. It was that night we ran to Kroger and picked up all the ingredients! Here’s the recipe for our new favorite dessert, apple cider floats!

INGREDIENTS

  • 3/4 of a glass of apple cider (buy one gallon or a half gallon from your local farmer’s market, Aldi or Kroger.)
  • 1/4 of a glass of ginger ale
  • Vanilla ice cream (we used Great Value vanilla bean)
  • Hershey’s caramel syrup (easier than the stuff out of the jar)
  • Nutmeg
  • Cinnamon

INSTRUCTIONS

This is the most simple dessert you can probably make. Fill your glass 3/4 of the way with cider, 1/4 with ginger ale. Leave some space at the top, otherwise it will overflow when you add ice cream. Add two scoops of ice cream. Drizzle a generous amount of caramel syrup. Top with nutmeg and cinnamon.

Easy! The total cost of making these for three people came to about 10 dollars, and we still have some in our fridge about a week or two later. It’s delicious, and when you’re in between seasons it gives you that fall taste without making you overheated.

Parmesan-crusted tilapia

I love tilapia. It’s cheap, it’s easy to cook and it’s fish for the person who doesn’t like fish. It’s also pretty healthy! I was delighted when Paige combined two of my favorite things: cheese and tilapia.

Serve with gold potatoes and oven roasted broccoli. Yum!

Ingredients

  • 4 Tilapia Fillets (defrosted if frozen)
  • 1/4 Cup Parmesan Cheese
  • 1/8 Cup Butter
  • 1 1/2 Tablespoons Mayo/Dressing (I use Hellmann’s Light)
  • 1 Tablespoon Fresh Lemon Juice
  • 1/2 Teaspoon Fresh Dill
  • Pepper to taste

Instructions

  1. Turn broiler onto high and adjust oven rack to the top.
  2. In a small bowl, combine all ingredients except the tilapia. Set aside.
  3. Place tilapia fillets on a foil lined pan.
  4. Broil for 3 minutes.
  5. Remove from the oven, flip over and divide the parmesan mixture over the uncooked sides of the tilapia.
  6. Return to the oven and broil an additional 3-4 minutes making sure not to over cook the fish.

Quick bites: Frozen chai

$5.25??? WHAT?

I don’t know about you, but I love chai. It’s spicy and sweet, and hits just in the right spot in terms of a caffeine boost. However, I’m not a huge fan of hot drinks. They tend to make me sleepy, and when there’s no espresso in them, I tend to get too comfortable and want to pass out in class. So the perfect solution is frozen chai! The problem is that my wallet takes a major hit when I order blended chai. So here’s how to make them at home for much less than what coffee shops charge.

What you’ll need:

  • 1 packet Oregon Chai Latte mix (you can also use the liquid, but I don’t know where to buy that. I stole these packets from a dining hall last year, so this is especially cost-effective.
  • Milk
  • One tray of ice cubes

Pop your ice cubes into a blender. Make sure to use a whole tray, unless you like your frozen drinks a little milky. Add the chai mix, then pour milk up to the top of the ice cubes. Blend. Pour into a glass and top with whipped cream and cinnamon, if desired.

Paige found this sandwich recipe on Pinterest, and it has to be my new favorite recipe for the Crock Pot.

Type: Slow Cooker
Serves: 4-5 sandwiches
Ingredients
  • 2 tablespoons butter
  • 1 large sweet onion, sliced
  • 2 green bell peppers, sliced
  • 3 boneless,skinless chicken breasts, sliced
  • 2 tablespoons Dale’s Steak Seasoning
  • sliced Mozzarella cheese
  • hoagie rolls
Instructions
  1. Spray a 3 – 4 quart slow cooker with non-stick cooking spray and turn to LOW heat.
  2. Add butter, onions and green peppers.
  3. Toss chicken with steak seasoning, salt and pepper, then add to slow cooker.
  4. Cover and cook for 5 hours.
  5. Serve on hoagies with a slice of cheese melted on top.
